Chicken Fajitas

Slice chicken breasts into strips, and place in a dish with the salsa, lime juice, salt and pepper, add water to cover.
Cooking Pour the liquid from the chicken into a thick based frying pan and cook over a high heat to reduce by about half. Add strips of chicken, and stir frequently. When the chicken turns white, add the onion and peppers. Continue cooking and stirring until the liquid has evaporated and it is sizzling and cooked. Cheese Omelet
Whisk the eggs well and add the salt and pepper. Add olive oil to a thick based frying pan, and heat. Once hot, pour the egg in, cook until moist. Sprinkle the cheese in the center of the omelet and fold in half. Serve with 2 pieces of whole rye toast, and almond butter.
